What you’ll need
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tbsp orange zest
- 1/2 cup cold unsalted butter, cubed
- 1 cup fresh or frozen cranberries, roughly chopped
- 2/3 cup heavy cream, plus 1 tbsp for brushing
- 1 large egg
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2 tbsp orange juice
Make it
- 1Heat the oven to 400°F and line a baking sheet with parchment.
- 2Whisk the flour, sugar, baking powder, salt and zest. Cut in the butter with your fingers or a pastry cutter until it looks like coarse crumbs with a few pea-sized pieces.
- 3Toss in the cranberries. Whisk the cream, egg and vanilla, pour it in, and stir just until a shaggy dough forms.
- 4Pat the dough into an 8-inch round about 1 inch thick, cut into 8 wedges, and space them on the sheet.
- 5Brush with cream and bake 18–20 minutes until golden. Cool 10 minutes.
- 6Whisk the powdered sugar and orange juice until smooth and drizzle over the scones.
