Creamy Spinach Rice Skillet
A comforting one-pan dinner that turns a few fridge staples into something special.

What you’ll need
- 1 tbsp butter
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2 cups chicken or vegetable broth
- 4 oz cream cheese, softened and cubed
- 4 cups fresh baby spinach
- 1/3 cup grated Parmesan
- salt and black pepper, to taste
Make it
- 1Melt the butter in a large skillet with a lid over medium heat. Cook the onion until soft, about 4 minutes, then add the garlic and rice and stir for 1 minute.
- 2Pour in the broth and bring to a boil. Cover, lower the heat, and simmer until the rice is tender and most of the liquid is absorbed, 15–18 minutes.
- 3Stir in the cream cheese until melted, then fold in the spinach a handful at a time until wilted.
- 4Stir in the Parmesan, season with salt and pepper, and add a splash of broth or water if it seems too thick.
