Sautéed Potato and Green Bean Hash with White Beans
A quick skillet-based dinner that uses par-boiled potatoes to ensure a fast cook time with a crispy finish.

What you’ll need
- 2 large russet potatoes, peeled and cut into 1/2 inch dice
- 1 can (15 oz) cannellini beans, drained
- 1.5 cups green beans, trimmed and halved
- 2 tbsp unsalted butter
- 1 tbsp vegetable oil
- 1 tsp smoked paprika
- 0.75 tsp salt, to taste
- 0.5 tsp onion powder
Make it
- 1Place diced potatoes in a microwave-safe bowl with 2 tbsp water; cover and microwave on high for 4 minutes to pre-cook.
- 2Heat 1 tbsp oil and 2 tbsp butter in a large skillet over medium-high heat until butter foams.
- 3Drain potatoes well and add to the skillet in a single layer; cook for 6 minutes without stirring to develop a crust.
- 4Add 1.5 cups green beans, 1 tsp paprika, 0.75 tsp salt, and 0.5 tsp onion powder; stir and cook for 5 minutes.
- 5Stir in the 1 can of cannellini beans and cook for 3-4 minutes until the beans are heated through and the green beans are tender.
- 6Adjust salt to taste and serve immediately while hot.
